Cheese! in Tequisquiapan
About an hour east of Querétaro, you can experience an elevated cheese tasting in the beautiful “magic town” of Tequisquiapan. This location also offers a unique wedding destination and venue, along with their peaceful views in the valley.
After more than 6 years of making fresh cheeses with their commercial brand Quesos NéOle, they decided to challenge themselves to make matured cheeses.
Bocanegra describes the process (translated):
"We immediately realized that if we wanted to enter the market with cheeses of these characteristics and of high quality in order to compete with imported cheeses, it was essential to have an adequate space for their maturation process. This need inspired us to build an underground cellar that we named Cava Bocanegra.
In our cellar we mature and refine cheeses of very different flavors, textures and maturation times. All of them based on traditional recipes of European origin, but with our personal touch that we have been including over the years, which makes them authentic "signature cheeses".

On the other hand, our modern and comfortable Cava Bocanegra facilities are designed to receive visits and groups. For this, we have a team of professionals whose purpose is to serve the people who visit us and share with them everything related to the production of our cheeses and the maturation processes. At the same time that we offer and guide them in the tastings of our cheese boards, which can be accompanied with different pairings of wines and craft beers from the Querétaro region.”
They have two restaurant areas on the property and can host wedding events from 10-300 guests in their ample garden space or terrace:

"Located in the upper part of the cellar, Gastronómica restaurant is a gourmet space, with a stunning landscape, the different dishes prepared in the most traditional way possible from our own bread, bacon, and the wide variety of Néole cheeses.
Next to the cellar building the Deli seeks to provide a more relaxed experience with simpler dishes, while maintaining the best quality standards, guaranteeing freshness and exquisite flavor. The deli space is ideal to spend a pleasant and quiet time with family, friends and of course, your pets are always welcome!"
In addition the gourmet group offers cheese tables, cheese boards and specialized tastings to make your wedding day a bit more special and they have a huge selection of cheeses to sample from.
